Kimberlie Le is the co-founder and president of Prime Roots. Berkeley-based Prime Roots is a plant-based meat company taking a fresh take on old-world deli and charcuterie. The company crafted the first-of-its-kind sliceable deli and charcuterie in nostalgic flavors like turkey, ham, salami, pepperoni, bacon, pâté, and foie gras using koji that replicates the umami taste and texture of meat. The B-Corp’s mission is to satisfy meat cravings in a better way with plant-based deli meat that is clean, wholesome, and sustainable.

Returning guest, Chelsea V Davis, is passionate about vegan advocacy, building community, and climate, social, and food justice. In addition to being the founder of the Veggies Do It Better Vegan Night Market, the largest vegan festival in the Pacific Northwest, she is the co-founder of the International Vegan Earth Day March and Animal Rights Collective Portland (ARCPDX). Since 2011, Chelsea has organized 100s of virtual and in-person events including other vegan food festivals, protests, marches, VegFests, international health and animal rights conferences, summits, panels, activism tours, fundraisers, the Master Veg Program, legislative actions, and more.

Karen Anderson is the president and founder of Cannon Beach Bunny Rescue, which is a 501(c)(3) certified rabbit rescue dedicated to finding and implementing peaceful, compassionate solutions to the rabbit overpopulation in Cannon Beach, Oregon, because every bunny deserves respect, love, and protection.
